Class and Cancellation Policies

Classes are demonstration style unless noted. Instructors reserve the right to
alter menus due to availability of
seasonal ingredients.

Payment must accompany each
class reservation. Phone registration
must be reserved with a credit card.
Space is limited. If a class is full, your
name may be placed on a waiting list.

Gretchens will refund or credit tuition
for cancellations up to 48 hours before
class. Refunds or credits will not be
given for cancellations less than
48 hours before class. Credit given
may be used for future classes or
purchases in the store.

Classes may be cancelled due to
insufficient enrollment. Upon cancellation,
we will contact you by phone. Payment
may be transferred to another class, refunded or credited.

Class seating is based on a lottery
system. Please inform us prior to the
class if you wish to be seated with
other quests.

Guests will receive a tasting of all
the dishes prepared in class and a
complimentary glass of wine. The first
tasting may not be served until an hour
after the class begins.

As Good As It Gets! - With Greg Atkinson
Monday, September 20, Evening 6:00-8:00 / $50
What better way to start our Fall series of cooking classes than with our favorite “celebrity chef” Greg Atkinson, former Chef at Canlis, cookbook Author, and Top Culinary Instructor!!!! Taken from Chef Atkinson’s cookbook “Northwest Essentials”, this evening’s menu will begin with Oregon Pear and Hazelnut Salad with Oregon Blue Cheese, the main course; Chicken Breasts baked with Chanterelle Duxelle, Smashed Potatoes with Thyme, and Sautéed Greens with Garlic. Our evening concludes with Cinnamon Crumble Apple Tart with Salted Caramel Whipped Cream. PLEASE NOTE: THIS CLASS IS AT 6:00 PM.

Chef Jim has taken his cues from the Italians as they tend to have their priorities straight: wine food, and love, in no particular order. Starting with a fabulous salad, our main course will be Dungeness Crab Alfredo, with hand made pasta and the freshest crab. Seasonal fruits will be used to prepare an unforgettable dessert. All of this matched with Renee’s perfectly paired wines.

Harvest Time with a Mediterranean Twist -

Tuesday, October 5, Evening 6:30-8:30 / $40
Mary Ellen’s recent travels to Portugal have inspired tonight’s menu to include olive sautéed almonds and cheese wafers, a “Cataplana” (a traditional cooking vessel) filled with a savory shellfish and chorizo stew, along with a risotto made with farro, kale, mushrooms and Pecorino Romano Cheese.

Fine Dining - With Chef Robert Atterberry
Wednesday, October 6, Evening 6:30-8:30 / $40
Innovative preparations and stylish presentations are surpassed only by Chef Robert’s superb food. On the menu: Beef Tenderloin on Crostini with Honey Horseradish, Seafood Newberg with Champagne Cream Sauce presented in a Puff-Pastry Vol-au-vent, Roasted Golden Beets with Pine nuts and Dried Fruit, a medley of Quinoa with Fennel Pollen and for dessert, Pots au Chocolate with Sugar Cookies.

Knife Skills- “The Most Important Tool in your Kitchen” - With Chef Nicholas Smith HANDS ON
Thursday, October 7, Evening 6:30-8:30 / $35
There is no better way to learn knife skills then from a knife expert like Chef Nicholas. This course is designed to give you basic fundamental and applicable skills to safely handle and use a Chefs Knife. Basic cutting techniques such as dicing, mincing and chopping will be covered as well as classical French techniques such as brunoise, julienne and chiffonade. This night only 15% off on all Henckels Knives! A light supper and wine will be served at the end of the evening.

This evening will begin with a Phyllo Pastry Appetizer, followed by a pair of savory salads. Our entree will consist of prawns and pasta with bacon and feta cheese.

Farmers Market Fare - With Chef Liz Abelson
Wednesday, October 13, Evening 6:30-8:30 / $40
As the farmers markets begin to close, Liz will take what is best from the late harvest to prepare a fine Fall supper. Tonight’s menu will include; Roasted Pumpkin Soup with Corn Relish, handmade pasta with greens and a wonderful Carbonara inspired Cheese Sauce, a colorful Fall Salad ending with Hazelnut-honey Stuffed Apples.

Tour of the Mediterranean - With Chef Nahla Gholam
Tuesday, October 19, Evening 6:30-8:30 / $40
This evenings international menu begins with Tyrobitha, a Greek Appetizer of Cheese and Fillo. A warm Roasted Beet and Cabbage Salad from France will be followed by an Italian Chicken Barley Stew. A delightful dessert will end our journey of this flavorful region.

Our evening will begin with an Artichoke Crab Dip, followed by Oven Roasted Salmon with a Pesto Aioli, Braised Brussels Sprouts, Potato Gratin and a Caramel Apple Crisp for dessert, all paired with fabulous tasting beers!

Fall Enchantment - With Chef Paul Cartwright
Monday, October 25, Evening 6:30-8:30 / $40
Chef Paul will demonstrate his culinary skills as he starts the evening off with a Roasted Butternut Squash Soup, moving on to a fabulous Pork Roulade with Fall Vegetables and a Port Demi Glace. The grand finale will be Pecan Pumpkin Mousse Parfait.

There is so much to love about this time of year, including the cooking of foods that warm the soul! Chef Jim begins our meal with a salad with homemade dressing, the delicious elegant main entrée will be Pork Medallions in a Peach and Ginger Snap Crust, along with Couscous. Ending in a dessert from Farm to Market Bakery all expertly paired with wines from Renee.

Sit down and relax with an appetizer starter as you watch Chef Paul prepare a Cranberry Pumpkin Seed Salad with Honey Mustard Chevre. Followed by a Glazed Turkey Roll with Apple Chestnut Stuffing and if that isn’t enough we’ll end the evening with a Hazelnut Truffle Pie. Everything you will want to know to prepare for your own Thanksgiving guests.

You don’t have to be Scandinavian to learn how to make the best holiday cookies ever! Doreen and Anne will teach you the skills to master Krumkake, Ebelskivers and Lefse. Bring a tray to carry your flavorful cookies and flat bread home. Anne will also demonstrate how to make Kransekake, the Norwegian Celebration/Wedding Cake.

Today you will prepare 3 different kinds of Biscotti; Lemon, Nutty and Orange Almond. Anne will teach you how easy it is to make, then turn the kitchen over to you! After our cookies are done, we’ll package them in cellophane bags tied up with ribbon. What a great holiday gift for a neighbor, teacher or friends.
